Skimmed Milk and Rice Payasam

Payasam is a traditional, favourite milk based dessert of south indian cuisine, which is a must at all auspicious occasions and celebrations.It is made with washed and soaked rice, milk, and ghee roasted nuts . Flavoured with cardamom and added with chopped nuts for a crunchy taste in between, it's a delicious recipe which is a must taste recipe! I have used skimmed milk to power calories and fat content. Consumption of skimmed milk in place of full fat milk is an essential part of weight. When we remove most of the fat ( cream) of milk by repeating the boiling and cooling process of milk, we get skimmed milk. Do try this recipe, which is rich in calcium, protein, vitamins A and B complex too!

(Note, I had made this for 50 people, so the quantity looks more, I have reduced the measurements.)
First, wash and soak the rice in 1/2 cup water for 20 minutes. Then drain the water (use it for Face or hair wash for beautiful results) - 2
Then heat ghee in a kadhai. Add cardamom powder, rice and saute on slow heat for 10 minutes till aromatic. (I added some whole cardamom pods also, you can add too)

Then add 1 cup warm water and cook covered on low flame for 8 to 10 minutes till semi soft. Then add the milk, stir well and keep simmering the Payasam till the rice is fully softened.

Now add saffron, sugar and mix well. Continue cooking till the mixture is thick. Then switch off the flame.

Now heat 1 tablespoon ghee in a small tadka pan. Add the dry fruits, stir well and then pour on the Payasam. Mix and serve either hot or cold.

Variations:
In place of rice, you can add cooked moong daal, chana daal along with some rice.
You can also prepare Payasam with sooji, grated coconut, sago, oats or bhagar.
