In a pot, add the water, rice, and salt. Cook over medium heat until the water is absorbed, stirring occasionally. This will take about 5–6 minutes.

In a bowl, whisk together the milk, sugar, and cornstarch until smooth.

Once the water is absorbed from the rice, pour in the milk mixture and stir constantly until the rice pudding thickens slightly. Be careful not to let it get too thick, as it will continue to set as it cools. As soon as it starts to thicken, remove from heat and add the vanilla.

Pour the mixture into bowls, sprinkle with cinnamon, and let cool before refrigerating. Enjoy!
