Stuffed Brinjal potatoes in gravy

Prepare brinjals with ¾ cut for stuffing. Combine ingredients for stuffing. Stuff it in the brinjals. You do not have to stuff them till the top, but it is important to press the stuffing tightly down so it does not come out while cooking.

Heat up oil in a pan. Crackle cumin. Add asafoetida powder. Add brinjals. And mix lightly. Add pat dried potatoes and the remaining stuffing. Lightly Combine everything well.

Cover and cook. Combine lightly every 3-5 minutes till the potatoes are 50% cooked. Add hot water till the level or even above the level of the veggies and the spices if needed combine well. Cover and cook. If the curry thickens a lot, yet the veggies are not fully cooked, add a bit of more hot water to make it thin and allow it to cook further. When the veggies are ready, the curry is at the right consistency and oil is seen on the surface, consider that it is ready.

If at the time of serving the gravy looks very thick, add a bit of hot water and bring it to a boil tobadjust consistency. Garnish with chopped coriendar. Serve with bhakhri/rotli.
