Soak the beans overnight in clean water. The next day, rinse them and set aside.

Fill a kettle with water and bring to a boil.

In a large pot, add enough olive oil to coat the bottom. Heat over medium-high heat and add the bacon, cut into thick pieces. Cook until it starts to brown. Remove the bacon and set aside.

Chop the onion and add it to the same pot. Sauté until it softens and changes color, then add the garlic and cook for 1 more minute.

Add the beans and bacon back to the pot and cover with boiling water. Lower the heat and simmer for 1 to 1 1/2 hours. Skim off any foam that forms at the beginning, cover with a lid, and keep the heat low.

Blend half the beans (or as much as you like for a creamier texture) with an immersion blender or in a food processor. This makes the beans creamy and delicious. Season with salt and pepper, and serve with fresh bread!
