#GlobalApron 2024 challenge week 29 ingredient; horseradish. The after effects of Covid left me without sense of taste and smell for a year. I would get frustrated and determined to find something I could taste . I saw my jar of fresh horseradish and thought if I could smell or taste anything maybe it would be horseradish. I got a teaspoon of it and wow I could taste and smell and the best part was it tasted and smelled like it should.

Ingredients

  1. 4-6” long piece of horseradish root
  2. 2 tablespoonswater
  3. 1/8-1/2 cupwhite vinegar
  4. Pinchsalt

Cooking Instructions

    Rinse horseradish root and pat dry.

  2. 2

    Peel skin with a vegetable peeler.

  3. 3

    Chop root into pieces. Place pieces in food processor. Add water, process til well ground. Strain excess water off if too watery.

    Add vinegar,a pinch of salt and pulse to combine. Depending on how much horseradish you processed it may require additional water, vinegar and salt.
    Transfer to a jar and refrigerate. This will keep for 4-6 weeks. Adding the vinegar stabilizes the flavor. The longer you wait to add the vinegar the hotter the flavor. Add vinegar within 3-5 minutes or if you want a mild horseradish add vinegar to food processor with chopped horseradish and process.

I grow it in my garden. The bugs adore the leaves but leave the roots alone.
