California Farm Walnut Dessert Crepes

New fresh crop California walnuts are coming in. Imagine, 800,000 tons expected, with demand only for 625,000 tons. Farmers are ripping out walnut orchyards to grow something they can sell. So many walnuts, they are being made into cat litter pellets.
This french dessert is made with all purpose flour and ground walnuts, thin pancakes with a creamy honey vanilla filling and a topping with raisins, walnut halves, cream, chocolate sprinkles and optional Grand Marnier Liqueur for adults.

This french dessert is made with all purpose flour and ground walnuts, thin pancakes with a creamy honey vanilla filling and a topping with raisins, walnut halves, cream, chocolate sprinkles and optional Grand Marnier Liqueur for adults.

Buy shelled Chandler walnut halves and pieces, sort out the halves, chop the pieces fine in your food processor.

Make smooth batter with all purpose flour, chopped walnut, milk, molten butter, eggs, baking powder, honey, vanilla, pinch of salt. Rest 15 minutes to activate baking powder.

To make the filling, whip cream with melted honey and vanilla, pinch of salt.

Heat oven to 200F degrees. Heat dinnerplate to 200F degrees in oven. Bake 1 pancake. Pour 1/3 cup (6 Tbs) batter in one side of a low heat pancake skillet sprayed with olive oil, swirl around till bottom is covered, 4 minutes, flip when bubbles appear in pancake, another 4 minutes. Place on dinner plate in oven to keep warm.

Cover one half of pancake with whipped cream, nuts, raisins and pieces of home made dark chocolate. Fold, top with drizzle of honey, chocolate sprinkles, walnut halves, soaked raisins, whipped cream. Keep warm in oven. For the adults, add a drizzle of Grand Marnier Liqueur. Taste. Adjust ingredients as desired, bake eleven more pancakes and freeze for later or make more desserts now. Enjoy.
