I love eating ripe Dalat bananas, but I bought too many and had some extra flour at home, so I decided to make this bread.

I love eating ripe Dalat bananas, but I bought too many and had some extra flour at home, so I decided to make this bread.
Steps

Peel the bananas and mash them by hand (so the bread stays moist and you can see pieces of banana). Add 2 egg yolks, sweetened condensed milk, unsalted butter, and sugar. Mix well until the sugar dissolves.

Prepare a large bowl and sift in the all-purpose flour, rice flour, and baking powder.

Combine the banana mixture with the flour mixture and let it rest for 15 minutes.

Preheat the oven (place a bowl of water inside) or preheat an air fryer with water under the rack for 10 minutes.

Grease a baking pan with butter or oil to prevent sticking. Pour in the batter (fill the pan halfway or just a bit more, as the bread will rise while baking). Optionally, decorate the top with banana slices.

Bake at 330°F to 340°F (165°C to 170°C) for 30 minutes.

When the bread is done, remove it from the oven, let it cool, then take it out of the pan.
