  1. 2confit duck legs,
  2. 1large apple,
  3. 1shallot,
  4. 1 tablespoonchopped parsley,
  5. 3eggs,
  6. 1 1/4 cupsall-purpose flour (150 grams),
  7. 1 packetbaking powder,
  8. 1 cupshredded Swiss cheese (100 grams),
  9. 1/2 cupmilk, warmed (125 ml),
  10. 1/3 cupsunflower oil (80 ml),
  11. Black pepper

    Preheat the oven to 350°F (180°C). Remove all the fat from the duck legs (save it to cook potatoes if you like) and shred the meat. Peel and grate the apple. Peel and thinly slice the shallot.

    In a mixing bowl, whisk the eggs with the flour and baking powder. Gradually add the oil, then the warmed milk.

    Stir in the shredded cheese. Mix, then add the duck meat, shallot, apple, and parsley. Season with black pepper and mix again.

    Pour the mixture into a 10-inch (26 cm) silicone loaf pan and bake for 45 minutes. Let cool and remove from the pan. Serve cold with a mâche or endive salad, or warm with sautéed apple wedges. Enjoy!
