Khada Masala Gosht or Mutton curry with whole spices is a lip-smacking Mughlai preparation made in every Indian household. It might be with a slightly different method of preparation for each household, it still is the most loved traditional Indian non-Veg dish sought after by many a meat lovers. This dish by me has a unique twist to it this time due to the use of Yellow Chilli powder.
Yes, you have heard it right. It is made using Yellow Chilli powder by me thus giving it an altogether different and a unique look as well as taste and flavour. The aroma of the Yellow Chilli powder is so enchanting.
Yellow Chillies are found in Punjab and South of Kashmir and are the rare and special variety of Chillies known to provide lush colour, mellow flavour and piquancy to the dishes. These can be used in Thai Yellow Curries too. These are a bit milder than the Red one's but absolutely flavourful and aromatic. Made from ground Yellow Chillies, it imparts golden colour to the dishes. It's rich in Vitamin C and is used in any curry to give it a nice Yellow colour and a flavourful tint. It is definitely hot as well but little bit lesser compared to the Red one's.

Heat oil in a pressure cooker. Add curry leaves and whole garam masalas at first one by one and fry for a few seconds. Next add thinly sliced onions and fry till light brown and almost translucent.

Meanwhile wash and clean mutton bone-in. Allow it to drain well. Add it to the cooker along with ginger garlic green chilli paste. Sear it well for about 4-5 minutes on a low to medium high heat.

Add salt, turmeric, roasted coriander powder, yellow chilli powder and mix well. Sear for a minute more. Add water almost about 1 cup or a little more. Pressure cook for 6-7 whistles.

Allow the pressure settle down on it's own before opening the lid of the cooker. Adjust salt at this point. Also if desired, one can add about 4-5 tablespoons of thick homemade curd. Cook on a high until the water if any gets absorbed well and the masala gets thicker and well roasted.

Garnish with some freshly chopped coriander greens and Garam garam masala. Give it a final mix. That's it. It is ready to be dished out.

Serve it piping hot alongside homemade Rotis or Chapatis, Pooris, Parathas and Naans. Enjoy!
