One-pan lemony chicken spinach orzo
Sharing the recipe here as it’s delicious and I want it to become a go-to given that the ingredients are always in my kitchen

In a pan, add olive oil with diced chicken. When the chicken is cooked add the garlic + leek with salt, herbs de provence and oregano
- 2
When the leek is soft, add the broth and tomato juice with 1 cup of orzo. Cook on medium heat for about 6 minutes.

After 6 minutes of cooking the orzo, add the cream and stir gently. Let it simmer on low-medium heat for another 6 minutes

Just 2-3 minutes before you turn the heat off, add the spinach + some feta cheese +lemon zest and lemon juice. Turn the heat up. Stir gently. Add more cheese if you want. Serve.
