Assemble ingredients
Blanch Cauliflower florets for 3-4 minutes till florets is 50 % cooked and keep aside to drain excess water.

In a mixing bowl add maida + corn flour + salt + black pepper powder + Kashmiri red chilli powder + garam masala + ginger garlic paste + soya sauce and give a good mix.

Add water accordingly, we need a thick yet pouring consistency batter.
Coat the cauliflower florets into batter, coat all over nicely and drop in hot oil, fry till crisp and golden brown. - 4
In a mixing bowl add all the mentioned sauce + red chilli powder + sugar + salt + little water, mix well and keep aside.

In a pan/ wok, add oil and allow to heat, add chopped ginger garlic and sauté for few seconds, then add chopped onion + capsicum + green chilli and fry for 2-3 minutes under medium to high flame.

Then add the sauce mixture and mix well, add little more water, bring to boil and cook for 3-4 minutes. Add water as per preferred gravy. Add corn flour in little water and mix well and keep aside.

Add the corn flour mixture into gravy and stir well, add the fried cauliflower and mix well. Cook further for 2-3 minutes and make sure the cauliflower florets coats well with gravy. Gradually gravy thickens, switch off flame and dish is ready.
