Bitter gourd without its bitterness is a failure! Just like eating chilli without spiciness! This is my super easy method to make the popular Chinese dish known as "stirred fried bittergourd with egg".

Bitter gourd without its bitterness is a failure! Just like eating chilli without spiciness! This is my super easy method to make the popular Chinese dish known as "stirred fried bittergourd with egg".
Steps

Remove the seeds. Do not scrub too clean in order to preserve the bitterness.

Slice bitter gourd 2mm thickness.

Prepare the eggs in a bowl. Add salt and pepper powder.

Stir the eggs.

Add 4 tablespoons of cooking oil into your cooking utensil.

Turn on high heat and wait for the cooking oil to bubble.

Pour in the egg mixture.

Quickly stir fry the egg within 1 minute. Do not overcook it!

Add the bitter gourd. Add 2 tablespoons of cooking oil from the side.

Continue to stir fry without turning down the heat.

While doing so, you will see the water coming out from the bitter gourd. Do not add water! Stir fry continuously for 5 minutes to keep the egg moist while cooking until the bitter gourd turn soft.

Ready to serve with rice.
