  • 1 1/3 lbsmixed mushrooms (about 600 grams)
  • 3green onions
  • 1 ozginger (about 30 grams)
  • [Seasonings]
  • 1 tablespoonsoy sauce
  • 1 tablespoonmirin
  • 1/4 teaspoonground black pepper
  • 1 tablespoonwater

    Prepare all the ingredients.

    Quickly rinse the mushrooms and drain well. Peel and shred the ginger. Wash the green onions and cut into sections.

    Heat a pan and add 1 teaspoon avocado oil. Sauté the shredded ginger until fragrant.

    Add the mushrooms to the pan with the ginger. Pour in 1 tablespoon mirin, cover, and cook for 5 minutes. Covering helps retain moisture and the mushrooms’ natural flavor.

    Uncover and add the seasonings. Stir-fry with the mushrooms.

    Add the green onion sections and stir-fry briefly. Turn off the heat and transfer to a serving dish.
