This is a famous dessert sweet in Karnataka.This crispy Badam puri or badami poori is prepared using maida , ghee and sugar. Triangular pooris are deep fried and dipped in sugar syrup to get crispy badam puris, which are soft from inside.

Steps

Take seived maida flour in a bowl. Add ghee and pinch of salt. Rub the ghee thoroughly to the maida by hand. You can squeeze it in your fist to check whether ghee binds the flour together.

Add water gradually to the flour and knead a medium soft dough. Like soft chapati dough consistency. Let it rest for 15 to 20 mins.

In a wide pan add 1 &1/2 cup sugar,3/4 cup water,saffron strands. Boil the sugar syrup till you get one string consistency. You can check the syrup in between your thumb and index finger you will get a string. Add lemon juice and cardamon powder. Lemon juice will prevent crystalization of sugar. Sugar syrup is ready keep it aside.

After rest the dough has become soft. Make lemon sized balls from dough. Roll it into small puri. Fold it twice to get a triangular shape. Roll it again gently to make it little big in size. Prick this puris in 4 to 5 places with a fork so that it does not puff up more.

Take required oil in a kadai and heat it. After oil is medium hot add 2 puris or as it fits in your kadai. Fry this on low medium flame so that it gets cooked well from inside.

After they are fried nice crispy and good light colour. Take them out with a strainer and dip it in prepared warm sugar syrup. Dip it for a minute by turning side. Then remove it from syrup and place it on a strainer plate to remove excess syrup. Repeat the same process for all puris.

Enjoy the Badam Puri. Crispy from outside and juicy from inside.
