Spinach Potato Dry Subji. Aloo Palak

The cooler days in India bring with it a bounty of fresh leafy greens that are a storehouse of nutrients and an amazing ingredient to make a variety of seasonal dishes. And I must say that my most favorite greens is the palak or spinach. Hence, the quintessential Palak Ki Sabji. This one pan Palak Ki Sabji is a comforting dry potato and spinach dish, which is also vegan and gluten-free.

And I must say that my most favorite greens is the palak or spinach. Hence, the quintessential Palak Ki Sabji. This one pan Palak Ki Sabji is a comforting dry potato and spinach dish, which is also vegan and gluten-free.
Steps

Cut the potato and spinach..
Roughly chop onion tomato garlic and chilli
Make everything ready. - 2
Take mustard oil in a pan.
Add cumin seeds and Asafoetida to crack.
Then add onion.Saute till onion turns little brown then add garlic and grated ginger.
Mix well. - 3

After that add diced potatoes and mix well.
Cover the pan and let potato cook on a slow flame.
After potato get half cooked,add tomato, Green chillies and salt
Mix well.
Cover the pan and let the potatoes get cooked. - 5
Now add chilli, turmeric, coriander powder and little sugar.
Mix gently.
Lastly,add chopped spinach and cover the pan for another 3 minutes,
Open the lid and gently mix the cooked spinach with potato.add Kasuri methi and switch off the flame. - 6
Aloo Palak subji is ready
Transfer into serving bowl.
Serve immediately.
Note: I served this subji with naan.and it taste sooo Yummy..
