Ingredients

30 minutes
Makes 1 serving
  • For the onion paste. :
  • 3/4 cupchopped onions 🧅
  • 1/2 tbspgarlic, chopped
  • 1 tspginger, chopped
  • For the tomato puree :
  • 3/4 cuptomatoes
  • 1green chilli chopped
  • 1dry red chilli, chopped
  • Other Ingredients :
  • 1 cupsoaked kabuli chana
  • 1 cupfresh methi leaves, finely chopped
  • 1 tbspchana dal
  • 1 pinchcooking soda
  • 1 tbspoil
  • 1clove
  • 1cinnamon stick
  • 1cardamom
  • 1bay leaf
  • 1 tspsugar
  • 1 tspfresh cream or malai
  • 1 tspoil
  • 1/2 tspcumin seeds
  • 2 tbspspring onion whites, finely chopped
  • 2 tbspspring onion greens, finely chopped
  • 1/4 tspturmeric powder
  • 1 tspred chilli powder
  • 1 tspchole masala
  • 1/2 tspgaram masala
  • 1/2 tspchat masala
  • 1/2 tspdried mango powder
  • 2 tbspspring onion greens, finely chopped
  • Salt to taste
  • Other Ingredients :👇
  • 2white bread burger buns
  • Spring onions whites + greens to garnish

Steps

30 minutes
  1. 1

    Combien kabuli chana, chana dal, a pinch of soda & salt in a pressure cooker. Add 1 cup water & pressure cook for 4 whistles. Allow the steam to escape before opening the pressure cooker.

    Take oil in a pan, add cumin seeds,when they splutter add cloves, cinnamon, bay leaf & cardamom & saute for 30 seconds.

    Add onion paste and saute for 5 - 7 minutes. Add tomato puree, turmeric, red chilli powders, asafoetida, garam masala, chole masala & dried mango powder, cook for 5 minutes on a slow flame 🔥 stirring occasionally.

    Add chopped methi leaves, spring onion whites & cook for 3 minutes.

    Add boiled chole along with water, spring onion greens, salt, sugar & cook for 5 - 7 minutes & till chole thickens a little. The chole should be of thick consistency.

    How to assemble : Take a burger bun on the table top. This is known as 'Government Sandwich Bun Loaf ' in South Africa.

    Using a sharp knife, cut out most of the soft bread from inside leaving a thick wall & bottom. The bun will be hollow now. Keep the removed soft bread a side.

    Ladle the curry into the hollow & put back the soft bread you removed on the top. You could use this bread to eat the curry as "this is ALWAYS eaten with hands".

    Note : Actually any type of curry (vegetarian / non vegetarian) goes into a Durban Bunny Chow, it depends on the cook & your tastes !
