Preheat the oven to 400-430°F. Start by peeling the potatoes with a peeler. Cut them into varying thicknesses and lengths. Quickly rinse the fries under cold water. Place them in a towel to dry.

Then place them in a small bowl, add salt, and a tablespoon of sunflower oil. Spread them out on a baking sheet placed on an oven rack. Sprinkle with coarse salt. Bake for about twenty minutes.

To add flavor, you can choose from a few options - paprika, Espelette pepper, or rosemary - which can be added during cooking. When you're satisfied with the result, stop everything for fries that taste like... potatoes 🥔.
