My Greek Yoghurt Scones

In South Africa, making scones is a must in most households. I would use iNkomazi, which is a version of Sour milk. Inkomazi makes the scones soft centred and a nice outer crust. Living in the UK, I have found that Greek Yoghurt does the trick too

In South Africa, making scones is a must in most households. I would use iNkomazi, which is a version of Sour milk. Inkomazi makes the scones soft centred and a nice outer crust. Living in the UK, I have found that Greek Yoghurt does the trick too

Sift flour, sugar, salt in one bowl

Add cold butter, cube it and place it in the flour, mix with your finger tips until flour changes into crumbs

Now add the baking powder and whisk evenly. The reason for adding it only now is so that you don't overwork the baking powder when mixing the butter

In a separate bowl, beat your eggs, vanilla essence and Greek Yoghurt.

Mix your wet mixture into your dry bowl, portion at a time. Mix together using a butter knife, do not be heavy handed.

Sprinkle flower on your work surface. Add your dough, sprinkle flour on it, and fold four times. Do not knead. Flatten with your hand, not a rolling pin. 3cm thick, and cut with your preferred cutter.

Bake this at 220'C for 15min, this will make a dozen depending on how big or small your cookie cutter is.
