Place all the syrup ingredients in a saucepan. Once it starts to boil, skim off any foam. Let it boil for 3 minutes, then remove from heat and let it cool completely.

Sift the flour and baking powder together in a bowl.

In another bowl, add all the ingredients except the orange juice and baking soda. Mix until the sugar dissolves.

In a glass, combine the orange juice and baking soda. Stir, and once it foams, pour it into the bowl with the wet ingredients and mix a little more.

Add the dry ingredients to the wet ingredients and mix until you have a smooth dough.

Let the dough rest for 10 minutes.

In a bowl, combine the chopped walnuts, sugar, and cinnamon. Mix and set aside for topping the melomakarona.

Shape the melomakarona as desired and bake in a preheated oven at 350°F (180°C) for about 20 minutes, or until golden brown, depending on your oven.

As soon as you take them out of the oven, dip them in the cold syrup.

Finally, sprinkle with the walnut, sugar, and cinnamon mixture.
