Spring onion, Methi and Alu sabzi

Fine chop methi, spring onion, tomatoes and boiled potatoes.

Heat oil in a pan, add jeera, red chilli, bay leaf and hing. Add washed onion to tadka. Saute and add tomatoes, saute it well.

Also add green chilies, as onion and tomatoes softens, add washed methi, mix it well. It will cook in few mins. Add little water if needed.

Add all the spices and salt. Also add potatoes and mix well. Cook for few mins.

Garnish with coriander leaves, serve and enjoy this winter special sabzi with roti.
