Ingredients

20 minutes
3 servings
  • 4 stalksspring onions (scallions)
  • 2medium size potatoes (peeled and chop into chunks)
  • 2 tablespoonscooking oil
  • 1/4 teaspoonmustard seeds
  • 1/4 teaspoonmethi dana (fenugreek seeds)
  • 1/2 teaspooncumin seeds
  • 1/8 teaspoonhing (asafoetida)
  • 1 teaspoonginger & garlic paste
  • 1/2 teaspoonregular red masala or red chilli powder
  • 1/2 teaspoongaram masala
  • 1/4 teaspoonturmeric powder
  • 1/4 teaspoonamchoor (dry mango powder)
  • As neededSalt per taste
  • As neededwater

Steps

  1. 1

    Wash the green onions and dry them completely before slicing. Discard the dried ends of the green stalks (if any).

    Peel the potatoes and cut them into chunks. Soak potatoes chunks in water till use.

    Heat oil in a wok or pan over medium heat. Add mustard seeds, methi seeds and cumin seeds, hing and saute for few seconds. Add white part of spring onion and saute for few seconds. Add ginger & garlic paste and saute.

    Next add potatoes and 1 tablespoon of water. Let potatoes cook for about 5 minutes. Then add red chilli powder, turmeric powder, garam masala powder, amchur powder and saute for few seconds.

    Now add green part of spring onion, salt and mix. Add 1-2 tbsp of water. Reduce the gas to low-medium heat.Cover and cook for 8-10 minutes or until the potatoes are cooked but not mushy.

    Switch off gas, when the potatoes are cooked and the green onions are soft.

    Serve the spring onion aloo sabzi hot with chapatis.
