Lovely as a main dish, can be covered with some natural yogurt when served, which is a nice accompaniment, or had as is. Can also be served a a side dish to a meat based dish.
A very much improved version to the fried potato kofte you can get around Christmas time in stalls.

Ingredients

3-4 People
  1. 1.5 kgpotatoes
  2. Breadcrumbs
  3. 2eggs
  4. small onion
  5. Chubritza (Thyme can be used as replacement) - about 2 tablespoons
  6. Salt and Pepper to taste

Cooking Instructions

    Boil 1.5kg potatoes (non-peeled)- bring to boil, then simmer on lower heat (1-2 on a hob) for 20 to 40 min. Test by poking a larger potato with a fork and if it pierces freely it is done.
    IMPORTANT: once cooked, drain water immediately and don't allow them to soak and absorb more water.

    Peel AFTER boiled so the potatoes absorb less water

    Grate peeled potatoes without squishing much

  4. 4

    Add very finely diced small onion (or half normal onion)

  5. 5

    Add a fair bit of chubritza (about 2 table spoons),, mix in with 2 eggs and add salt, black pepper- to taste and mix everything

  6. 6

    Scoop into flat ball shapes, like flat meatballs and cover in breadcrumbs

  7. 7

    Fry until golden brown on the outside
    Place on a kitchen tower when done, to absorb some of the oil used to fry.
