We all know that mayonnaise is an unhealthy product. But it is such a taste enhancer that sometimes it is difficult to avoid it completely. This homemade mayonnaise makes it comparatively healthy in the sense that you can avoid palm oil and the preservatives.
Although it is homemade, it is NOT less tastier than a branded product. It is equally creamy and finger licking.

Steps

Keep oil and milk in a freezer for 2 hours. This is a very important step and it MUST NOT BE SKIPPED. If you use them at room temperature, the mayo will curdle due to the heat during the grinding process.

Take milk, sugar, salt and ice in a grinding jar. Grind on high for 10 seconds. Then add ½ cup of chilled oil and grind for 30 seconds. The mixture will look emulsified as seen in the pic.

Add ¾ cup of oil this time and grind for 30 seconds on high. Add vinegar and the remaining ¾ cup of oil. Grind for 30 seconds on high. Wola! The creamy and delicious mayonnaise is ready!

Transfer it in a clean, dry, sterilised jar and refrigerate it. Use it up within 2 weeks.

This is a very basic plain mayonnaise. You can combine different sauces, spices and herbs to make different flavours of mayonnaise e. g. Mint mayonnaise, Chipotle sauce, burger mayonnaise etc.
