Instant Ragi Dosa with Special SI Chutney
An easy way to consume calcium-rich ragi (finger millet)

First mix ragi flour, rice flour and rava. Add in curd, ginger-chilli paste, salt and jira.

Add in water as needed and make a dosa consistency batter. Cover and rest the batter for 10-30 minutes.

Meanwhile, prepare the Special SI Chutney. Ready all the chutney ingredients. In oil, add rai. When it splitters,add dals. When pink add hing.

Add in red chillies, curry leaves and chopped ginger. Saute for 2 minutes. Now add in tamarind and saute a bit.

Now add in chopped tomatoes and salt. Mix. Cover and cook the tomatoes well. Add in haldi and Kashmiri chilli powder. Mix well.

When the tomatoes are mushy, switch off gas. Cool completely and take it in mixer jar. Add in jaggery powder to balance the sourness. Add in 2-3 tsp of water, if needed and crush to a smooth chutney.

Now temper the chutney with oil, rai and curry leaves.

Making Instant Ragi Dosa:
Mix salt into the batter and mix well vigorously. Add water if needed and set a medium dosa batter consistency. Heat a tava on low flame and spread ragi dosa - 9
When top side gets dried, drizzle some oil and turn and cook well. Millets need to be cooked properly. So roast rhe ragi dosa on medium flame. Turn again and cook.
