Delicious quinoa salad with a lot of different veggie optional add-ins. This healthy filling salad is a great vegan or vegetarian option and is generally just very tasty and easy to make ❤️ 😍

Add 2 cups water and quinoa to a pan, cover, bring to a boil, reduce to simmer, let cook for 15 minutes or until all the water is gone, and fluff with a fork.

Cut broccoli into small pieces, add to a bowl with a little water, cover,and microwave for 2-3 minutes or steam on the stove. Add to the quinoa in a big bowl.

Sauté the asparagus or blanch it until it is bright green and soft. Add it to the salad with the drained garbanzo beans and chopped parsley.

Mix all of the dressing ingredients in a separate bowl and add to the salad.

Mix all together, cover, and place in refrigerator until it gets cold.

Serve and enjoy!
