Made this recently for a Co-Worker Birthday carry in and lets say it was a big hit. I love this cause you can switch it up with anything you like fruit wise and more.

Crockpot Mixed Berry French Toast

Ingredients

2hrs. 15min.
12-14 servings
  1. 1Full Loaf Sliced Bread
  2. 2Pkgs. Cream Cheese, softened
  3. 1 C.Packed Brown Sugar
  4. 2tsps. Ground Cinnamon
  5. 1 C.Milk, plus extra
  6. 1(12Ct.) Dozen Eggs
  7. 1tsps. Vanilla Extract
  8. 3Tbsps. Maple Syrup + Extra to Serve
  9. 1 Pkg.Frozen Mixed Berries

Cooking Instructions

    Spray a 6Qt. slow cooker with nonstick spray. Add bread to Crockpot. Then in a large microwave bowl add Cream Cheese, Brown Sugar, 2tsps. Ground Cinnamon, and Milk only adding a Tablespoon or so at a time til mixture is smooth and creamy by stirring frequently. Once everything is combined and smooth pour mixture between each bread slice coating both sides. Then set aside.

    In another large bowl whisk together Eggs, 1C. Milk, Vanilla Extract, and Syrup til well combined. Then Pour all over top and sides and any open spots of bread. Press tops of bread down a bit to coat tops. Then top with Berries. Cover with along piece of paper towel that hangs a bit over so it helps to absorb some of the extra moisture so mixture doesn't become to soggy and not cook properly. Add lid and cook on High for 2hrs. 15min. Once time is up turn heat down to keep warm and serve.
