Ingredients

  1. 1 kg.carrots
  2. 1 litrefull-fat milk
  3. 3 tbspmilk powder
  4. 1/2 cupfresh cream(malai)
  5. 4 tbspghee
  6. 1 cupsugar
  7. 1 tspcardamom powder
  8. 10-12cashews
  9. 10-12almonds
  10. 2 tbspraisins(kismis)
  11. 1 tbspalmond flakes to garnish

    First rinse and Peel the carrots and put them aside. Now grate the carrots. In a heavy kadai, add all of the grated carrots and saute it with ghee.

    Now heat and add milk and Mix the grated carrots and milk together. Cook this mixture on a low-medium heat. Keep stirring this halwa mixture often, scraping the sides of the kadai to remove the evaporated milk solids. Stir the milk solids into the cooking mixture. Cook the carrot and milk mixture until the liquid is reduced by 75%.

    Add ghee in a kadai and roast the dry fruits and add in the mixture. Mix it well. Next, add sugar, dry fruits powder and cardamom powder. When the halwa has reduced to a pudding-like consistency, add fried nuts and dry fruits of your choice. I have added cashews, almonds and golden raisins. Our gajar ka halwa is ready to serve.

    Serve gajar ka halwa warm from the pan. Refrigerate any leftovers, warming them before serving. Garnish with some dry fruits and almond flakes. Enjoy!!!
