Ingredients

30 minutes
3 to 4 people
  • For soaking nuts in Red Wine
  • 3 tablespoonsRed Wine
  • 2Chopped Almonds
  • 7Sunflower seeds
  • 5-10chopped Pumpkin seeds
  • 2chopped pistachios
  • 6chopped black raisins
  • To make Cake
  • 2 cupsall-purpose flour
  • 2 tablespoonsmixed dry nuts
  • 3 tablespoonspowdered sugar
  • 1/4 teaspoonwhite salt
  • 1/2 tablespoonbaking powder
  • 1 tablespoonsCocoa powder
  • 1 teaspooncustard powder
  • 1/4 teaspoongrated Nutmeg
  • 1/4 teaspooncinnamon powder
  • 1 teaspoonmelted butter
  • 1/2 teaspoonolive oil
  • 1full cup warm milk (previously boiled)
  • For garnishing
  • 5-6chopped pumpkin seeds
  • 3-4chocolate peices for grating
  • 3-4sliced cranberries

Steps

    Take all dry fruits, nuts along with Red Wine. Chop them with a sharp knife and transfer to bowl.
    Tip: 1) Red Wine used in the recipe is Dindori Reserve Shiraz.
    2) Any Red Wine can be used.

    Take 3 tablespoons of wine and soak all the nuts in it. Cover and keep aside for at least 2 days so that all wine will be completely soaked up by nuts to enhance the flavor of the cake.

    Open the soaked nuts after 2 days. The soaked nuts will little increase in size due to wine in it. Take all ingredients together to make Wine Cake.
    Tip: 1) The longer you soak the nuts, the better the taste of the cake. I soaked for 2 days but it will be great to soak for more number of days.
    2) Adjust the quantity of the nuts as per preference.

    First, take bowl to put in prepared cake batter. Grease it with butter and keep aside.Take another mixing bowl and seive all-purpose flour in it.

    Put a pinch of salt and rest of the ingredients like baking powder, cinnamon powder, grated Nutmeg and Cocoa powder and powdered sugar and Custard powder. Vanilla essence is substituted with Custard powder of Vanilla flavour.

    Mix them well. Add soaked nuts and few dry nuts along with all the left over wine if it may have.

    Add olive oil, vinala essence and milk. Mix it and the batter is ready.

    Pour the prepared batter into the greased bowl or any pan depending upon the preference and proceed to bake in microwave for 5 minutes at 800 watts or it may vary depending upon the microwave.

    Take out from the microwave and check if it is baked properly by inserting a toothpick inside and taking out. If it comes out clean, means the cake is ready.

    Allow to cool for some time and then transfer it to plate. Cut small peice from one side and check the spongyness of the cake.

    Cut the entire cake into peices and wrap it with aluminium foil to allow the cake to mature for two to three days before serving (at room temperature or in the fridge) Transfer it to serving plate. I kept it for 1 day. Garnished it with grated chocolate and few dry nuts like Pumpkin seeds and cranberries.
    It is optional to put chocolate or any nuts in garnishing. It can be served right away without any toping but toped it with chocolate to look nice or appealing.
