In a frying pan add 1/2 tsp oil and add the pumpkin seeds and sliced almonds and toast until slightly toasted, transfer to a paper towel to cool

Add all ingredients to a salad bowl, with the toasted almonds and pumpkin seeds. Add as much parmesan shavings to your taste. Season with salt and pepper and dress with the olive oil and balsamic vinegar
