This recipe is specially for my husband who is a Diabetic . Potatoes are Samir 's weakness . I try to avoid potatoes as much as I can but unfortunately he has a craving for it at all meal times . He must have potatoes mixed with any vegetables everyday . So I am always on the look out for recipes where I can avoid potatoes & give him something more healthy instead.
As Samir loves chat in any form , I have , here in this recipe , tried to swap potatoes for healthy Avocado 🥑 Salsa as a filling in the crispy puris, instead of the usual potato mixture.
Samir loved this Salsa so much so that he told me that from now onwards he would avoid potatoes 🥔 in any chat. Believe me , it tastes amazing , he also had 1 plate of Sev Puri with Avocado 🥑 Salsa. I had Dahi Puri with Avocado 🥑 Salsa filling which also tasted wonderful.
So ,do try this new variant of Avocado 🥑 Salsa Stuffed Panipuri . It's an Indo - Mexican fusion . Serve this Avocado 🥑Salsa Stuffed puris 🥙 🥙 with traditional mint / pudina pani & it tastes just divine .

Stuffing : Take a ripe avocado, cut it in half & scoop out the pulp. Take the pulp in a wide bowl. Add lemon juice & salt. Mash it very well, with the help of a fork.

Add tomatoes, onions, boiled corn, green chillies, coriander & chat masala.

Mix very well. Avocado 🥑 Salsa filling is ready. Refrigerate it till serving time.

How to assemble Avocado 🥑 Salsa Stuffed Panipuri : Take 6 - 8 puffed up puris in a plate. Crack the top of the puri with a spoon.

Add a spoonful of the stuffing in each puri. Serve it with mint / pudina pani. 🥙🥙

Note : This pani puri does not make use of sweet chutney as it does not go well with avocado salsa. So adjust the chillies in the mint / pudina pani accordingly.

Important : Avocado turns brown on cutting it, so it is important to squeeze lemon juice immediately on it to slow down the process of oxidation.
