I made this sweet potato fries recipe for fasting days. It's delicious and also very healthy, as it contains fiber, vitamins A and C, potassium, and iron.

Wash the sweet potatoes thoroughly, then peel them and wash again. Since they often have a lot of dirt, rinse them 3 to 4 times in water. Cut them into long, finger-shaped pieces as shown in the picture. Place the pieces in cold water and rinse twice more.

Drain the sweet potato pieces in a colander to remove all the water, then spread them out on a kitchen towel to dry completely. Heat oil in a pan over medium heat. Once the oil is hot, add the sweet potato fingers and fry until they turn light golden. Fry all the pieces in batches and remove them from the oil.

Sprinkle the fries with rock salt and black pepper powder, and mix well. Your tasty sweet potato fries for fasting are ready. Serve on a plate, garnish with chopped cilantro, and enjoy with cilantro-mint chutney.
