This week is women's day special, so I want to share my favourite recipe. My favourite recipe which I love to cook is , Chole Bhature. I love chole bhature because the rich, tangy, and spicy chole curry, made with chickpeas simmered in a medley of aromatic spices, dances on my taste buds. Paired with the pillowy soft bhatura, a deep-fried flatbread, it creates a symphony of contrasts. The crispy exterior of the bhatura gives way to a fluffy interior, soaking up the flavorful gravy. This delightful combination, often enjoyed with cooling accompaniments like pickled onions offers a truly indulgent and comforting experience. It's the favourite dish of my mother also, who is the most special person in my life.

Soak chole in water for 6 hours.

Boil chole with potato pieces with added salt in a pressure cooker.

After boiling, transfer the boiled chole with water in a utensil.

Heat oil in the pressure cooker and put whole garam masala.

Now add chopped onion and green chilli and saute till pink in colour.

Add garlic paste and chopped tomato.

Now add chole masala, chilli powder and mix well
- 8
Add boiled chole and potato, mix well, add water, chaat masala powder and salt.

Close the lid and cook till chole cooked well.

For Bhature, take oil and salt in a mixing bowl. Add maida, rava and baking powder and mix well.

Now add warm water and knead a soft dough.

Cover and keep aside the dough for 3-4 hours or minimum 2 hours.

Divide the dough in 6 equal parts and make lemon size balls.

Roll out the balls like poori.

Heat oil in a pan and fry the bhature till puffed up and golden in colour.

Remove from oil and keep on paper towel.

Bake these fried bhature placing on wired rack in oven for 5 minutes to give them taco shape.

Fill cooked chole in taco shell and garnish with Juliennes of onion, capsicum, beetroot and ginger.
