This is one of favorite weeknight staples- easy, healthy and all in one pan!
Steps

Cook the onions in a pan with the olive oil until fragrant on medium heat

Add in the ground turkey and cook until browned. Add in the salt pepper, garlic and onion powder.

Mix in the zucchini and black beans to retain moisture
- 4
Add in the enchilada sauce, tortillas and cheese. Let cook on medium heat covered for 7 minutes. Then enjoy!
