Ingredients

  1. 1 lbground turkey
  2. 1diced red onion
  3. 2shaved zucchinis
  4. Salt and pepper to taste
  5. 2 tbspgarlic powder
  6. 1 tbsponion powder
  7. 1 (16 oz)can enchilada sauce
  8. 1 (12 oz)can black beans
  9. 1 tbspolive oil
  10. 6corn tortillas sliced into strips
  11. 1 cupcheddar cheese
  12. Optional Toppings
  13. Queso
  14. Hot sauce
  15. Guacamole

Cooking Instructions

30 mins
  1. 1

    Cook the onions in a pan with the olive oil until fragrant on medium heat

  2. 2

    Add in the ground turkey and cook until browned. Add in the salt pepper, garlic and onion powder.

    Mix in the zucchini and black beans to retain moisture

  4. 4

    Add in the enchilada sauce, tortillas and cheese. Let cook on medium heat covered for 7 minutes. Then enjoy!
