Chicken & Pasta Soup

Steps

In a saucepan, add all the ingredients except the mint and pasta. Bring to the boil and cook for 50-60minutes. I used a chicken I had previously roasted that still had some meat on the bone.

Remove the ginger, chicken carcass, and bones. Allow to cool, then remove any meat and set aside.

Roughly smash the onions and slice the chorizo and set aside.

Add the pasta to the liquid. Add more water if needed. Cook for 5 minutes, then add everything back except the mint.

Garnish with a sprig of mint and serve
