Ingredients

Serves 3 servings
  • 4 1/4 ozfresh cod (about 120 grams)
  • 1egg
  • 1 cupall-purpose flour (about 140 grams)
  • 1 tablespoonbaking powder (such as Royal brand, or any baking powder)
  • 1 clovegarlic
  • 1 tablespoonchopped fresh cilantro
  • 2/3 cupwater (about 150 ml)
  • 1/4 teaspoonturmeric
  • Salt
  • Olive oil for frying

    Clean the cod by removing the skin and bones. Flake the fish into small pieces.

    Peel and crush the garlic. Chop the cilantro.

    In a bowl, combine the flour, cod, baking powder, egg, garlic, cilantro, a pinch of salt, water, and turmeric. Mix thoroughly.

    Pour plenty of olive oil into a deep skillet and heat over medium-high heat until hot.

    When the oil is hot, scoop portions of the batter with a spoon and drop them into the oil.

    The fritters will puff up; let them turn golden brown.

    Transfer to a plate lined with paper towels to drain excess oil.
