Take the spinach leaves and blanch them for about a minute or two. Now let it cool down. Now take a grinding jar, put the spinach leaves in it and coarsely grind them. Now keep this mixture aside.

Now take a big vessel, add soya flour in it. Now add all the chopped veggies mentioned in the ingredients section including grated paneer and ajwain too. Add the palak mixture too.

Mix everything well; add some oregano flakes and salt too. Combine everything well by adding 2 tbsp of water to form a soft dough-kind mix as shown below in the image.

Now heat a pan, brush about 2 tsp of oil. Now make big balls out of the mixture and flatten each of them to form a flat tikkis as shown below. Place them over the hot pan. It should be thin like chilas and small like tikkis.

Once it gets cooked from one side, flip the tikkis so that it gets cooked well from both the sides.

Repeat the same with the rest of the mixture. Your tikkis are now ready to serve. Serve this healthy dish with some curd or green chutney. It's quiet healthy hence you can give this to your children in tiffin and also serve as evening snacks.
