In a large saucepan, heat the olive oil and sauté the onion (and garlic, if using) over medium-low heat for a few minutes, until translucent.

Add the diced (or grated) carrots, celery, and zucchini. Cook for about 10 minutes, stirring often, until the vegetables start to soften.

Blend the cherry tomatoes in a blender until smooth. Add the blended tomatoes to the pan. Stir well and bring to a boil.

Season with salt and pepper, add a pinch of sugar if needed, and add the herbs (a bay leaf, and some thyme or oregano work great).

Partially cover and simmer on low heat for 30–40 minutes, stirring occasionally. The longer it cooks, the more flavorful and thick it becomes.

If the sauce seems too watery, remove the lid for the last 10 minutes to let excess liquid evaporate. If it’s too thick, add a splash of water or vegetable broth.
