Make a checklist. Gather the necessary items in advance and keep them ready.

In a skillet over medium heat, roast the urad, chana and toor dals until aromatic. remove and cool. Dry roast cumin and pepper corns, red chilies in a skillet over medium heat until aromatic, about a minute. transfer to a plate and let it cool. Grind roasted ingredients.

In a skillet over medium heat, heat 1tbsp oil and add mustard seeds, cumin seeds. Let the seeds pop, stir in asafetida. Add ginger, curry leaves and green chilies. Add the grated coconut and roast. Add 4 cups of water and bring to a boil. Add salt. Add idli rava plus the ground dal, and stir. Reduce the heat. let it cook and thicken to a dough consistency, about 6-8 minutes. 90% cooked. Turn off the stove. Let the dough cool.

Pinch the dough; Make balls the size of a lemon. Flatten the balls into patties

Place a heavy skillet over medium heat. Grease it with a tablespoon of oil. Place the patties in the skillet. Pour 1 tablespoon of oil evenly over each patty, cover the skillet, reduce heat and simmer. Flip after a couple of minutes to cook the other side
Both sides should turn brown and crisp. Place them an paper towel. Makes a total of 12 patties. Taste - 6
Serve hot or at room temperature. serve with ketchup or chutney. I served with ketchup and coconut chutney. Enjoy the protein rich thavala adai
