Easy Mango Compôte

Since mango season has arrived, I made this very special French compôte that can go very well as fillings for cakes, toppings on custard, cheesecakes, ice cream or waffles, can be mixed with yogurt, sided for cheese platters. It is less sweet than jam, a bit tangy, so have to be used up within a few days.

Easy Mango Compôte

Cut up the fruit into small chunks.

In low flame, heat a pan and pour the chopped mango pieces and stir. It will start melting.

Remember, compôte is all about slow cooking, which means low flame all throughout. Add sugar granules to the pan. Within a minute, the fruit starts reducing as you keep stirring for 4-5 mins

Add the lemon juice, and slowly as you see the color changing from sunflower yellow to a burnt yellow, and the texture turning sticky, remove pan from flame.

The compôte is ready, now store it in refrigerator and use it on a dessert of your choice! Used it as topping in Vanilla Pannacotta, check it out.

Adjust the sugar amount according to the sweetness of the chosen mango for this.
