Kathiyavadi Dhokli nu Shak (no onion-garlic)

Start by heating 1 tbsp oil in a pan. Add mustard seeds, let them splutter, then add jeera and hing.

Add 1½ cups water to the vaghar, bring it to a boil. Then add turmeric powder, salt, and gram flour gradually while stirring to avoid lumps.

Pour the cooked besan onto a greased plate and spread evenly. Let it cool and then cut into square.

Now in a pan, heat 1½ tbsp oil. Add mustard seeds, jeera, and hing. Once they splutter, add little water and then the dhokli pieces.

Add 1½ cups water, turmeric powder, red chilli powder, and salt.

Add curd and give a mix. Simmer for another 5 minutes so the dhokli absorbs the favours.

Add kasuri methi by crushing a little and mix. Serve hot with some roti or rotla and enjoy ✨
