  • To Combine:
  • 1 cupgrated Turai (Ridge Gourd), peeled, washed, and drained
  • 1 cupboiled basmati rice (preferably leftover)
  • 1/2 cupfresh malai paneer, grated
  • 2green chilies, chopped
  • 1 -inch ginger, grated
  • Handfulfreshly chopped coriander leaves
  • 1/2 cupgrated carrot
  • 1/2 cupgrated beetroot
  • 1/4 tspturmeric powder
  • 1/2 tspspicy red chili powder
  • 1/2 tspKashmiri red chili powder
  • 1/2 tsproasted cumin seeds
  • Salt to taste
  • 1/3 cupchickpea flour (besan)
  • To Coat:
  • 3/4 cupbread crumbs
  • For Pan Frying:
  • 3 tbspoil

    Prepare the Ridge Gourd:
    Peel, wash, and grate the turai (ridge gourd). Squeeze out all the excess water completely. This helps prevent sogginess.

    Mix the Ingredients:
    In a large mixing bowl, combine the drained turai with rice, paneer, chilies, ginger, coriander, grated veggies, spices, and chickpea flour. Mix everything well to form a soft, shapeable dough. Adjust besan if the mixture feels too wet.

    Shape and Coat:
