Thai Butternut & Carrot Soup

Steps

Peel and chop your carrots and butternut.

Boil in water over medium heat till soft.

Chop onions and fry in pot with a little cooking oil.

Add your soft cooked carrots and butternut to the fried onions in the pot.

Add the rest of your ingredients and simmer over low heat for 30 minutes.

When cooled down, blend with hand blender. (any preferred blender will do)

Reheat soup for approximately 10 minutes
- 8
Soup can be served with croutons or crashed cashew nuts as garnish
