  • 1 kgchicken thighs
  • 1 cupcarrot big diced
  • 1 cupIrish potatoes big diced
  • to tastesalt
  • 1 tspblack pepper
  • 1 tbscurry powder
  • 2 tbsginger, chopped
  • 3 clovegarlic, minced
  • 2 tbshabanero pepper, finely chopped
  • 1 cupgreen bell pepper finely chopped
  • 1 canCoconut Milk
  • 1bulb onions diced
  • 1 tspthyme
  • 1/4 cupspring onions diced
  • 3stock cube

Steps

  1. 1

    Wash chicken, season with salt, pepper, onions, stock cube and cook, don't add water; add irish potatoes allow chicken cook through once chicken is tender.

  2. 2

    Add curry powder, ginger, onion, garlic, pepper, salt and stock cube and stir.

  3. 3

    Allow to cook for 5 minutes. Coconut Milk and mix thoroughly.

  4. 4

    Add carrot, bell pepper and allow to simmer for approximately 4 minutes and turn off heat

  5. 5

    Serve with rice; I always enjoy it with basmati rice.
