Ambur mutton Biryani

#EF Ambur biryani is a popular, mildly spiced Biryani from Ambur in Tamil Nadu, South India... The legend has it that the mutton biryani was introduced to the Arcot royals through their connection with the Hyderabadi Nizams. Sir Hassan Baig, a cook himself for the Nawab at the Royal palace of Arcot made this biryani regularly for the royals. Later in the years, his son Kurshid Baig started to spread the delicacy by selling this biryani over a bicycle. That’s how the famous Star Biryani hotel was born. Note that they spell it as Biryani and not Biryani. They have been doing this since 1890. Star Biryani recipe has become a tradition that is continuing now for 4 generations. I have adapted this recipe... Seeraga samba rice, a traditional Tamilnadu variety of biryani rice is used for this authentically.

Take 1 cup lukewarm water in a bowl and add red chillies and set aside for 30 minutes... Discard water and grind to a fine paste.

Grind the ginger and garlic separately....

I made this in an electric cooker... I had three cups of rice, so I soaked the rice in four and a half cups of water with little mint and coriander leaves...

Add a little turmeric powder to the mutton and let it cook...

Heat oil in a pan, add cinnamon, bay leaves, cloves, cardamom pods and onion and fry well.

Once the onion is well fried, add the garlic paste and fry for two minutes. Then add the ginger paste and fry for two minutes. Then add the tomatoes and saute well.

Add chopped coriander, mint, green chilies and saute well. Add the ground chili paste and saute well. Add yogurt and saute well.

Once everything is mixed together, add salt, the cooked mutton and turn off the stove once it reaches a thick consistency.

Mix the mutton masala with the soaked rice, turn on the electric cooker and the biryani will be ready in half an hour...

Finally, you can add ghee, but they don't add ghee to Ambur Biryani... I have added ghee to this for my children...

Now ready to serve with chicken 65, onion raita, boiled eggs etc....
