Crispy air-fried potatoes topped with zesty nacho cheese + creamy sour cream sauce — just like Taco Bell’s iconic Fiesta Potatoes… but homemade & better!
Steps

Take 3 to 4 large potatoes. Wash them well. Peel them and cut in cubes medium size.

In a pot take water and let it boil. Add some salt and add the potatoes. Do not over cook. Cook the potatoes for 7 minutes.

In a small bow take olive oil, cooking oil and ghee. Add all mentioned spices into this and mix it well.

Take out the potatoes from the pot. Strain them and transfer into a baking tray or a small parchment paper. If you are using air fryer you can choose according to that.

Add the spices mix into this potatoes and mix gently.

Preheat oven or airfryer at 420 degree F. Bake or airfry these potatoes until they turned out crispy and golden.

In a small pan take some butter. Add some red chili powder and taco seasoning. Add 1:4 cup milk. Add sliced American cheese. Let it melt and your cheese sauce is ready.

Serve these copycat fiesta potatoes with this cheese and sour cream.
