Khandeshi baingan bharta

Take a big brinjal, clean it and apply oil all over the brinjal, cook over the direct heat till charred from all sides. Take it off the heat and place on a plate to cool slightly.Then cut the top edge of brinjal and peel off the skin.

Chop the ginger, garlic, green chillies,onion, tomato and coriander leaves. Keep it aside. Mash the roasted brinjal.

Keep a fry pan on medium heat,add oil, chopped ginger, garlic,onion, tomato fry for two minutes. Then add turmeric powder, coriander powder and salt, and saute for a few minutes. Let the onion and tomato mash well.

Now add the mashed brinjal and roasted peanut powder give a nice mix, then add chopped coriander leaves. Baingan bharta is ready to serve.

Transfer to a serving bowl. Enjoy the super tasty khandeshi baingan bharta with hot roti and phulka.
