A simple Japanese curry recipe that boosts the flavor of packaged curry roux. It's my go-to Japanese curry recipe and after having curry one night, there's plenty of left overs for curry udon the next day!

A simple Japanese curry recipe that boosts the flavor of packaged curry roux. It's my go-to Japanese curry recipe and after having curry one night, there's plenty of left overs for curry udon the next day!

To a heavy bottomed pot, heat oil on medium heat and sear beef until all sides are browned but not cooked through. Take off from heat and add more oil.

Add chopped onions and sautee till translucent then add chopped carrots and chopped potatoes. Cook for 3 mins

Add 6 cups of water to veggies and add beef back into the pot. Let simmer for 30 mins until potatoes are tender.

After simmering, add curry cubes and let it dissolve. Add grated apple, curry powder and garam masala. Simmer for another 30 mins till beef is tender

Serve on a bed of hot rice and enjoy!
