Unagi Rice

Rice cooker meals are the best especially when prep time takes less than 5 mins!
This is a hearty and nutritious meal made with dashi broth and low GI rice, but you can sub for chicken broth and regular rice or anything you have at home.
The edamame and unagi can be found at any Asian grocery store in the frozen section and should cost less than $20!

Steps
- 1
All ingredients needed shown in photo form.
- 2
Make dashi broth with any instant package and season with soy sauce, mirin, and salt to taste (let it cool down to room temperature).
- 3
Wash rice until water runs clear and pour dashi broth over rice. Add edamame and cut unagi into bite size pieces and place on top of edamame.
- 4
I used the Tiger brand rice cooker and let it cook for 30 mins. Once finished, take out unagi and mix the rice.
- 5
Plate it nicely. I made egg ribbons to go with and garnished with green onions.
