Use evaporated milk instead of coconut milk, or you can use coconut milk if you prefer.

Bring water to a boil. Add a pinch of salt and a little olive oil.

Once boiling, add the spaghetti noodles. We used spaghetti No. 3 and cooked for 10 minutes (we used enough for 3 servings). When done, drain and set aside.

Heat a pan with oil. Add the green curry paste and stir-fry (if using meat, add it now and cook until almost done).

Add some evaporated milk or coconut milk to help dissolve the curry paste.

Add the cooked fish balls, then add Thai eggplant and basil leaves.

Add more evaporated milk or coconut milk as needed. Taste as you go until you reach your preferred richness. If it's too spicy or strong, add more milk or coconut milk.

Season with 1 tablespoon fish sauce, 1 tablespoon sugar, and a little seasoning powder. Taste and adjust as needed.

Add the spaghetti noodles and toss everything together until well combined.

Serve on a plate and garnish as desired.
