Ingredients

30 minutes
4 people
  1. 6-8Small brinjals (baby eggplants) (slit crosswise but not cut through)
  2. 6-8potatoes peeled slit crosswise but not cut through
  3. 1Chopped tomatoes
  4. leavesSome curry
  5. 1whole green chilie
  6. 6 tbspoil
  7. 1/2 tbspMastard seeds
  8. 1/2 tbspcumin seeds
  9. 1/2 tsphing
  10. 1/2 tbspturmeric
  11. Salt as per taste
  12. For Masala Stuffing (No onion, no garlic):
  13. 2 tbspRoasted gram flour (besan)
  14. 5 tbspRoasted peanut powder (or crushed peanuts)
  15. 1 tbspRed chilli powder
  16. 1.5 tbspcoriander powder
  17. 2 tbspsugar
  18. 2 tbspchopped coriander

Steps

  1. 1

    1. Make the Stuffing Masala:

    In a bowl, combine roasted besan, peanut powder, and all the dry spices.

    Add sugar, salt, and coriander.

    Mix everything to form a slightly sticky stuffing. Add a teaspoon of oil or water if needed.

    2. Prepare the Brinjals and Potatoes:

    Slit each brinjal and potato into 4 parts (like a cross), without cutting all the way through.

    Gently stuff them with the masala.

    Heat oil in a cooker

    Add mustard seeds, and a pinch of hing one chilie and some curry leaves than put chopped tomatoes when it become soft

    Gently add the stuffed brinjals and potatoes. And sprinkle left over masala.
    Pour 1 glass watercover thelead, and cook till 2 whistle.
    Now open the lead after steam released from cooker. And your sabji is ready.

    Now garnish with coriander

    Now serve with fulka roti, khich,kadhi, sukhdi, salad,achar full dish.now your Gujarati dish is ready enjoy.
